
Jamaican Coconut Pudding
 
1/2 shredded or flaked coconut
1/4 cup dry bread crumbs
1 cup milk
2 eggs
2 tablespoons butter
2 tablespoons sugar
1/8 teaspoon salt
      -1.             Preheat oven to 350°F (175°C).
      -1.             Put all ingredients in a blender and beat until smooth. Pour into a buttered pie dish and bake for 1 hour.
